Medley was born out of Chef Jun’s personal and culinary journey, a journey that began in 2016 and took him to kitchens in Singapore, France, Japan, and Spain. Each destination left its mark on his approach to cooking: respect for Mediterranean ingredients, French technique, Japanese sensibility, and the explosion of flavors from Southeast Asia.
In his new home, Valencia, Jun has created a space where everything comes together. Medley is more than just a restaurant: it’s a meeting place for cultures, ingredients, and emotions. A fusion that doesn’t seek to surprise for its own sake, but rather through its harmony.
